Sheet Pan Mediterranean Cod

This 30-minute Sheet Pan Mediterranean Cod is a one-pan wonder packed with fresh, vibrant flavours — just roast the cod and veggies together, and you’re good to go! Perfect for family dinners or meal prep.

Ingredients

680g of fresh (blue) cod
1 tbsp olive oil
200g vine tomatoes
1 white onion chopped
1 bunch asparagus
1/2 cup pitted olives
1/2 cup marinated artichokes
3 tbsp capers (if you like them)
1 tsp oregano
1/2 tsp Celtic sea salt & pepper
fresh coriander to garnish

Directions

Preheat your oven to 210°C

Place the fish and veggies (except the marinated artichokes) on a large sheet pan.

Season the cod with oil, oregano, salt, and pepper.

Prepare the vegetables: leave the tomatoes whole or quartered, depending on size, quarter the onion, and trim the asparagus spears.

Bake for 20-25 minutes, depending on the thickness of the fish. For thicker fillets, bake for up to 28 minutes. Keep an eye on the fish so not to overcook it.

After baking, add the marinated artichokes and garnish with fresh herbs.

Serve on a bed of wilted silverbeet for some extra leafy greens and enjoy!
